Restaurant margins are thin, and a popular method for increasing revenue is by using cross-selling and upselling. What does that mean? It means that when a customer orders a specific menu item, your staff member (or online ordering site) ask the customer if they would like something additional. That something could be a larger size, a specific side or appetizer, a dessert, or even to make a donation to a cause.

To find out how many pizzerias use cross-selling and upselling, and how they go about it, we surveyed a selection of pizza restaurants within Canada and the United States. We received  70 responses, and compiled them together in the following infographic.

A few interesting points to note:
  • More than half of the pizzerias surveyed reported that they make between $1,000 - $5,000 a month through upselling and cross-selling.

  • More than half of the pizzerias surveyed reported that ticket averages increased 10% - 20% from cross-selling and upselling.
